The Bellini is a timeless Italian cocktail that epitomizes elegance and simplicity. Created in Venice, this delightful combination of fresh white peach puree and sparkling Prosecco creates a light, refreshing drink that’s perfect for celebrations, brunches, or any special occasion.

With its beautiful peachy-pink color and delicate flavor, the Bellini is a sophisticated alternative to mimosas and other sparkling cocktails. The key to a perfect Bellini is using ripe, quality white peaches and good Italian Prosecco.

Instructions

Official Recipe:

  1. Prepare the glass: Chill a flute glass beforehand for the best experience.

  2. Add peach puree: Pour the white peach puree into a mixing glass with ice.

  3. Add Prosecco: Add the Prosecco wine to the mixing glass.

  4. Stir gently: Stir gently to combine without losing too much carbonation.

  5. Pour: Strain into the chilled flute glass.

  6. Garnish: Optionally garnish with a fresh peach slice on the rim.

Note: The Bellini should be served immediately to preserve the bubbles and fresh flavor.

Tips

  • Use fresh peaches: Fresh, ripe white peaches make the best puree. You can blend them and strain for a smooth consistency.
  • Frozen alternative: If fresh white peaches aren’t available, frozen peach puree works well too.
  • Prosecco quality: Use a good quality Prosecco - it makes a significant difference in the final taste.
  • Don’t over-stir: Gentle stirring preserves the Prosecco’s delightful fizz.
  • Proper ratio: The traditional ratio is 2 parts Prosecco to 1 part peach puree.
  • Temperature: Both the peach puree and Prosecco should be well chilled before mixing.

Classic Variations

  • Puccini: Replace white peach puree with fresh mandarin orange juice
  • Rossini: Use fresh strawberry puree instead of peach
  • Tintoretto: Substitute with fresh pomegranate juice for a tart variation
  • Cipriani: The original recipe from Harry’s Bar uses very specific white peach varieties

History

The Bellini was invented between 1934 and 1948 by Giuseppe Cipriani, founder of the legendary Harry’s Bar in Venice, Italy. He named the drink after the 15th-century Venetian painter Giovanni Bellini, as the cocktail’s unique pink color reminded him of the pinkish hues in one of Bellini’s paintings.

The original recipe called for rare Italian white peaches, which have a distinctive flavor and color. The drink became a signature cocktail at Harry’s Bar and quickly gained international fame, becoming a symbol of Italian sophistication and la dolce vita.

Today, the Bellini is recognized by the International Bartenders Association (IBA) as one of the classic cocktails and remains a beloved choice for celebrations worldwide.

Cheers!
